One of my favorite Indian dishes is Baingan Bhartha (Eggplant)! So many childhood memories…

Whenever my mom would make bhartha, the house would always have this odd smell. I never knew what it was until I decided to ask one day. I used to sit in my room with the window open, so I just assumed it was coming from outside. Little did I know, it was coming from our stove!

When you broil the eggplant…

So recently I found out about this new type of coffee or should I say coffee blend…

Butter + Coffee + Oil? What?

According to Dave Aspery, the creator and “Bulletproof Executive”, it promises beneficial results.

I was doing some research to see if this is something that was worth looking into to tell my folks about it. I came across this article I read on Fast Company (Love this magazine) and…

Everyone is on a health trip these days! Diet this, diet that! I can’t eat this, I can’t eat that! I personally feel that no one needs to go on a diet. I think if you are good about exercising, then all you have left is to control your portions when you eat. Food plates in restaurants in the US are just enormous. Way over the portion sizes that anyone should be eating per meal!

My Baked Aloo…

Veggie Chow Mein Spaghetti Style

How was everyone’s 4th of July weekend? I had the best weekend. Anyone wanna try and guess what I did? Absolutely nothing! Well besides the fact that I made chow mein and Szechuan broccoli. This weekend was full of laziness and being fat. I got to spend quality time with my family and eat all the tasty dishes I desired!

I’m sure you must be wondering what I mean by spaghetti style in my title. My…

Tacos de Pollo a la Mexicana

I am a sucker for chicken tacos! Authentic or not, chicken tacos have a flare of their own!

Chicken is a meat that mixes well with a variety of flavors making it my favorite meat to cook with. Mixing two of my favorite things together, chicken and tacos…DEADLY!

Let’s just say I went a little crazy with tacos and chorizo this month. What can I say? I love my Mexican dishes!

One of my favorite items to eat is corn! There’s still that debate about corn being a grain or vegetable. Whatever it may be, I love it! Anything that has corn in it just automatically tastes amazing. Well…at least to me it does!

This salsa tastes good on a lot of different dishes or as a side for some. I added this is a topper for my Tacos de Pollo a la Mexicana and as a side for my Baked…

Breakfast… one of the healthiest, yet hardest meals for me to have everyday. I am never hungry in the morning! I have to force myself to eat something. It’s either I’m not hungry or I’m just being super lazy to get up and make anything. If you are one of those people then this recipe is for you! It is one of the fastest recipes you can think of. It involves throwing what you have in the kitchen…

I was craving tacos for the entire day! I came home and opened my fridge to cilantro, yogurt, chorizo, and garlic. I had tortillas and limes in my basket. How perfect was that! I had the making of a taco right at home, no need to go to the store! How perfect was that! It was meant to be!

I have had meat and soy chorizo, and I have got to say the soy one tasted much better. It could be possible I…

Mushroom and Soy Chorizo Lasagna Roll-Ups

One of my close friends was visiting me last weekend and stayed with me Saturday night. She had been wanting to learn to make a few dishes that she could make at home for her and her hubby. We decided to do a night of cooking to make something delicious and help her with portion control since she doesn’t want to overeat. I expressed how much I love to make smaller portions and how easy and time…

Memorial Day

Memorial Day 2014

Wishing everyone a very, very Happy Memorial Day!! Today we remember and honor our soldiers and those loved ones that have fallen or we have lost in active service.

Some fun facts I learned about Memorial Day:

- It was originally called Decoration Day because it would mark the day where soldiers would decorate the graves of those that have fallen

- At 3 p.m. today (or the last…

Fresh N’ Easy Guacamole

The weather is getting warmer and the nights are getting longer, but that craving for guacamole stays year round! Guacamole is not difficult to make. Most anyone can make an amazing guacamole! I do have to say though, I have tasted a few versions that I didn’t find appetizing.

My fresh n’ easy guacamole is quite simple and easy to make, so if you do mess this up, I can’t help you! Haha.

South Asian Heart Center held a lovely dinner to thank their donors last week. I had the pleasure of catering their dessert for the evening. The organization is always pressing everyone to eat healthier and exercise properly to maintain a better, healthier heart. I decided to go with a light, fluffy dessert that is a nice compliment to Indian food, but is also refreshing and easy on the stomach,…
